I found a neat recipe for pancake muffins last night. I planned on trying them this morning - but Miss CoCo wasn't feeling the whole pancakes as a muffin idea. Darn.
Anyways, a friend mentioned she made her daughter purple pancakes, and my wheels started turning, and we came up with these:

They didn't want any butter or syrup..? but Mommy sure did!
